Hello - Happy New Year! My last post was in late June - I'll admit that the heat of the summer and pregnancy swallowed me up for a while! Then came KB's birthday, her first trip to the E.R. (forehead cut - apparently common with toddlers), a new pre-school year, Hurrican Ike, losing power for 2 weeks, more heat and more pregnancy, crazy nesting...and exhale: a perfect peaceful ending to the rush: sweet little A arrived safely and beautifully on October 6.
Sigh. We made it. And we're so excited he's here!
Now that I'm getting back on my feet again and feeling a tiny bit more rested, I've been able to return some of the generosity we were given shortly after having little A. I belong to a great mother's group in our community that has a "baby meals" delivery program for families with new babies. It was such a blessing - and was so fun to see what everyone brought! So, since it's baby season down here, it's been fun to cook for girlfriends who have their hands full these days.
One recipe we loved that was super simple and comforting was Poppyseed Chicken. Not sure where we've been - as this was the first time we had tried this old-fashioned recipe. It's so comforting-Sunday-night-casserole! Serve it up with a salad and some bread, and you're set.
Disclaimer: you don't have to have a baby to enjoy this casserole.
